Stuffed date cookie recipe
Serves: 16
Ingredients:
- 230g dates (plus extra for filling)
- Water (approx 1 cup)
- 1tsp baking powder
- 2 scoops Salted Caramel Soy Protein Isolate
- 200g oat flour (blended oats)
Method:
- Preheat the oven to 180 degrees.
- Pit and soak the dates in boiling water for 10 minutes.
- Blend the mix (including the water) until a paste forms.
- Add the oat flour, protein and baking powder (adding more or less water) until you form a cookie dough.
- Roll into balls and stuff the cookies with half a date.
- Bake for approximately 20 minutes or until golden.
Brownie brittle protein cookie recipe
Serves: 6
Ingredients:
- 110g powered erythritol or icing sugar
- 30g chocolate protein blend
- 12g cacao powder
- 5tbsp aquafaba
- Pinch salt
- 1/2 tsp bicarb
- 1/2 tsp vanilla extract
- 1/2 tsp lemon juice
Method:
- Preheat the oven to 180 degrees.
- Mix together the dry ingredients.
- Add the liquid and use an electric mixer and beat until you get a fluffy brownie batter consistency.
- Spoon the mix onto a baking tray, making sure the cookies are spread out (they will expand and flatten out).
- Bake for 10mins and leave to cool completely before tucking in.
Strawberries and cream cookie recipe
Serves: 8
Ingredients:
For the cookies:
- 55g oats
- 60g plain flour
- 45g erythritol or other sweetener or sugar
- 2 heaped tbsp coconut butter/coconut cream (the thick part)
- 30g Strawberry Vegan Protein Blend
- 80- 110ml coconut milk
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
For the topping:
- 2 tbsp erythritol or other sweetener or sugar
- 2 tbsp Strawberry Vegan Protein Blend
- Strawberry FlavDrops or maple syrup, to taste
Method:
- Preheat the oven to 180 degrees.
- Make the cookies by combining the wet and dry ingredients, adding more or less milk until you get a thick but slightly sticky mixture.
- Shape into cookies and place on a baking tray. Bake for around 15-20mins and leave to cool.
- Once the cookies have cooled down, mix all the icing ingredients together with a little water and drizzle over the top to decorate.
